Time has been speeding by lately. I don't know where July has gone! It seems like every week is 4 days long: Monday, Friday, Saturday, Sunday.

Anyways, since Friday is one of four days that I am still aware of, I should post a recipe. Have you ever eaten chicken quesadillas? They are yummy, easy, and... yummy. My mom and I invented our own recipe for these together when I was teenager because we loved getting them from Boston Pizza, but ours turned out so much better! It's one of those recipes that is such a staple that I have never written a recipe for it. So here's my attempt....


What you need:

4 tortillas
oil (olive, canola, whatever)
2 green onions, finely chopped (you can use regular onions if they're all you've got!)
1 tomato, chopped
1 chicken breast, cooked and chopped into bite size pieces
1/2 - 1 cup grated cheese (I use marble, but tex-mex is even better)

How to make it:

Turn your oven on at a low heat, place a baking sheet inside, turn on the light, and turn off the heat once the oven is heated up a bit.

Heat a large frying pan over medium heat. Brush 1 side of each tortilla lightly with oil. Lay one tortilla in the pan and sprinkle cheese on half of the tortilla. Next add some onion, tomato and chicken. I usually kind of shred the chicken with my fingers as I'm adding it so the quesadillas aren't too lumpy. Sprinkle on a little more cheese then use a spatula to fold the side with no toppings over onto the toppings (so you have a semi-circle). Press down on the top with the spatula and allow to cook for a minute or two more, then flip. Once both sides are crisp and the cheese is melted, toss the quesadilla on your baking sheet in the oven to keep warm. Repeat with remaining ingredients.

Once they're all made, pull them out and cut them into thirds or quarters and serve with salsa and sour cream. And if you're a beef lover, a vegetarian, or whatever else, you can switch the recipe up!
