[Project disConnect day 8]

In 2007 I went to Mexico with my sister, brother-in-law and a couple of his friends. It was such a fun trip, we did some awesome stuff...

Like fulfilling my lifelong dream of swimming with dolphins with my sister. [I'm the one in the middle with the dolphin!]


We climbed an ancient Mayan pyramid.


Got a Mexican sunburn (much worse than a Canadian sunburn, ouch!) the day before climbing said pyramid.

I got tipsy for the first (and only) time with my sister.


I went parasailing!


[that's the rope that tied me to the boat below... and it wasn't a tiny boat, it had about 10 people on board!]


We went swimming in a cenote, repelling down a cliff and zip lining.


I wore a bikini (not much of an event at the time, but something I wouldn't do now!)


My sister and her husband got engaged (ps - it was a pretty amazing proposal, maybe I'll get a chance to tell you about it sometime...).


 I got to see my first sunset over palm trees.


And we all did a lot of this:



Oh yeah, and the whole point of this post: I ate fresh salsa for the first time. It was AMAZING! 


And you know what? It's so easy to make. Here's the recipe I like to use.

Fresh Salsa

What you need:

3 Tbsp finely chopped onion
4 cloves garlic, minced or crushed in a garlic press
3 large tomatoes, chopped
1 jalapeno pepper, seeded and finely chopped
2 Tbsp lime juice
salt and pepper

How to make it:

Place chopped onion and garlic in a bowl and fill with boiling water. Let them soak for 1-2 minutes then drain. Combine add remaining ingredients and season with salt and pepper to taste!

Grab some tortilla chips and get dipping. Yum!

This whole post put a huge smile on my face :) What a great trip! Sigh...

That was the only time you and I ever drank together though? Really? I mean, I guess so... but, really?

Oh, and fresh salsa - YUM! I didn't even like Mexican food before this trip, but the salsa at that restaurant completely turned things around for me.

I love looking at the photos of my 2 beautiful daughters. I am really glad you had the chance to take that trip together. It has given you some great memories to cherish together. You cannot even begin to imagine how proud I am of the two of you!! I love you so much!!!!
