Eat: Chocolate Zucchini Cake

Of all the uses for zucchini, chocolate zucchini cake has got to be my favourite! It's a super easy cake that is always moist (thank you, zucchini). If you've never made it, you need to - NOW. And if you have made it before, you should probably do it again. :)


What you need:


1 cup flour
1/2 cup cocoa
1 tsp baking soda
1/2 tsp baking powder
1/2 cup golden brown sugar
1/4 cup olive oil
1/2 tsp vanilla extract
2 eggs
1 cup peeled, grated zucchini
1/2 cup semi-sweet chocolate chips

How to make it:

Preheat oven to 350 degree Fahrenheit.

In a medium sized bowl, beat sugar & oil until combined. Add vanilla extract & eggs, then mix well. In a separate bowl, combine flour, cocoa, baking soda & baking powder. 

Pour half of the dry mixture into the wet mixture and beat until just combined. Add the grated zucchini to the remaining dry mixture and toss to coat. Finally, add the zucchini mixture to the batter and mix until completely combined. 

Pour the batter into a greased 8x8 inch pan and sprinkle chocolate chips over the top. Bake for 30-40 minutes or until a toothpick inserted in the centre comes out clean.

It's funny you should post that now. Cheryl just gave me a very very very large zucchini. Grandma and I are going to share it and we will both make zucchini cake. I think I will make mine into muffins so they are easy to take to work as a snack. And sooo good!!

That's a great idea, I thought about doing muffins too - that way they are already in individual servings! Yum. :)

My family and I were debating what the best way to eat zucchini is - zucchinni bread or fries zucchini...

Tegan, this should definitely be in the competition. I mean, nothing against zucchini bread and zucchini fries, but this has chocolate. :)
