I love how colourful this salad is. You may note that the onions look a lot more vibrant than normal. That's because I used a pickled pink onion relish instead of the onions, but you get the idea. The mint adds an interesting flavour to this salad, prepare to embrace your bitter taste buds a little!


Avocado & Grapefruit Quinoa Salad






What you need:



2 cups cooked quinoa
2 Tbsp chopped fresh mint
2 Tbsp lime juice
2 tsp sugar
1/3 cup vegetable oil
1 red grapefruit, peeled, with each section cut in quarters
1 avocado, pitted, peeled and cubed
1/3 cup purple onions, sliced


How to make it:

In a small bowl, whisk lime juice, sugar and oil. Stir in mint leaves. Add grapefruit, avocado and onion, and toss until coated. Pour over quinoa and serve.
