When I did Vegetarian Food Week, I found a granola recipe while browsing my vegetarian cookbooks. Since then I have tweaked it quite a bit so it's just to my liking.


Homemade Whole Grain Granola






What you need:


2 cups spelt flakes
2 cups rolled oats (not quick cooking)
3/4 cup bran cereal
1 cup sliced natural almonds
1/2 cup sunflower seeds
1/3 cup sesame seeds
1/3 cup hemp hearts
1/4 cup chopped walnuts (or raw macadamias for a treat!)
1 cup chopped dried apricots
1/2 - 3/4 cup honey (more to make it sweeter and form bunches)
2 tsp ground cinnamon
1 tsp ground ginger


How to make it:

Preheat oven to 375 degrees Fahrenheit.


On a lightly oiled baking sheet, spread spelt, oats and bran in an even layer. Toast for 10-12 minutes, stirring once in the middle of that time. Remove from baking sheet and place in a bowl to cool. 


Spread nuts & seeds on the baking sheet and toast them for 5-7 minutes then add them to the bowl. 


In a saucepan on the stove, heat honey, ginger and cinnamon. Bring to a simmer, remove from heat and pour over the grains, nuts, seeds & fruit. Mix well, it will take a lot of then leave on the counter until completely dry. 


Transfer to an airtight container and store in the fridge for up to 2 months, but I doubt it will last that long (we eat it all within a week!).


I like eating mine just with milk, but you can eat granola in many ways. If you like yogurt, try tossing some granola on top next time.
