I first posted this recipe earlier this year and reminisced about my trip to Mexico in 2007 (that was almost 5 years ago?... yikes!). But I didn't have a good photo of the salsa that the recipe is for. So here's a repost of the fresh salsa recipe, with a better photo!




What you need:

3 Tbsp finely chopped onion
4 cloves garlic, minced or crushed in a garlic press
3 large tomatoes, chopped
1 jalapeno pepper, seeded and finely chopped
2 Tbsp lime juice
salt and pepper

How to make it:


Place chopped onion and garlic in a bowl and fill with boiling water. Let them soak for 1-2 minutes then drain. Combine add remaining ingredients and season with salt and pepper to taste!
