This is my favourite lasagna. I like the addition of spinach (I often add mushrooms as well if I have some on hand) and the ground chicken or turkey instead of beef. The boys love it too and I love that it gets some greens in Gavin's belly!


Florentine Lasagna

What you need:

1 lb ground chicken or turkey
900 ml Tomato pasta sauce
6 Lasagna noodles, broken in half and cooked
1 cup Italian blend shredded cheese
1 pkg (500g) frozen chopped spinach, thawed and squeezed dry

How to make it:

Preheat oven to 350 degrees Fahrenheit. Cook noodles and brown chicken until no longer pink. Remove chicken from heat and stir in pasta sauce.

In a 9x9 baking dish, pour in enough of the meat sauce to cover the bottom, add a layer of cheese, and then a layer of noodles. On top of the noodles spread half of the spinach evenly.

Follow with another layer of sauce, cheese and noodles. Use the rest of your spinach on top of the noodles.

Use almost all of the rest of your sauce (save enough for a very thin layer), add some more cheese, and a layer of noodles.

For the topping, spread a thin layer of sauce on the noodles and top with cheese. Bake for 30 minutes or until the cheese on top is melted and beginning to turn golden brown.
