I've gotten tons of positive feedback from people who have tried this recipe since I first posted it in September 2010. We've made it so many times, but I always forgot to take a picture... until now! So if you haven't tried this one yet, do it, it's delicious. :)



Tex Mex Chicken

What you need:

4 chicken breasts (boneless, skinless, thawed out, of course)
1 orange bell pepper, sliced
Salsa
A handful of tortilla chips
Cheddar, marble or tex-mex cheese, grated

How to make it:

Preheat oven to 400 degrees Fahrenheit. Cut chicken breasts horizontally through the centre, but not all the way through. You should be able to open them up, but they should still be in one piece. Place 4 (give or take, depending on how big the breast is) slices of pepper in the middle and fold the chicken back up. Put the chicken breasts on a cookie sheet or in a baking dish and top with salsa. Bake for 20 minutes. After 20 minutes, remove from the oven and top with crushed tortilla chips and grated cheese. Bake for 5 more minutes then serve.
