I have a slight obsession with apples right now. I found some amazing tea the other day called "Mom's Apple Pie" at David's Tea. It is amazing and I can't get enough of it. And on top of that, Mason's mom gave us a bunch of apples from her tree when we left Regina. This is the first thing I made with those apples.


Apple Cinnamon Pancakes

What you need:

{pancakes}
1/2-3/4 cup apples, finely chopped (depending on how apple-y you want your pancakes)
1 cup flour
1/3 cup white sugar
1/3 cup brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 egg
1 cup milk
1/2 tsp vanilla extract
1 tsp cinnamon

{topping}
1 1/2 cups apples, sliced
1 Tbsp butter
1/2 cup brown sugar
1 tsp cinnamon

How to make it:

{pancakes}
Preheat oven to a low setting, turn the light on and shut off the heat. Place a baking sheet inside so you can put pancakes in here to keep them warm while you're making the rest.

Combine flour, sugars, baking power, baking soda, and cinnamon in a bowl. Combine remaining ingredients in another bowl then pour into dry ingredients. Mix well. Heat a pan or griddle on medium to medium-low heat. I grease my pan just to make life easier, too. Pour circle of pancake batter onto pan/griddle and brown both sides.

{topping}
Melt butter in a small saucepan over medium heat. Add apples and coat evenly in melted butter. Add cinnamon and toss until well coated. Add sugar and stir until fully combined. Bring to a boil then reduce to medium-low heat and simmer while you cook the pancakes, stirring often. Remove from heat when apples are soft and sauce becomes syrupy.

Finally, pile some pancakes on your plate and top with the apple-cinnamon syrup. Yum!

A couple other notes on the recipe:
-If you don't like lots of cinnamon, you could reduce the amount slightly.
-You could also reduce the amount of sugar in the pancakes themselves if the apples you use aren't too tart. The apples I used needed the sweetness.
