Good Morning!

Here is my effort at blogging about something "creative" this week... I tried this recipe this week and it was pretty good. It seems like a summer dish, and also would be good with some chicken added in, but all in all it was a different (good different) flavour and not hard to make. Also worth noting: this makes a huge amount of pasta. Great for your family, too much if you live in a little trio like me! But this did get the little guy's approval. It would also make a good side dish, if made in a smaller quantity!


Bowties & Greens Pasta

Ingredients:

2 cups (packed) fresh basil
4 green onions
1 lemon
500g bowtie pasta, cooked al dente
475g light ricotta cheese
8 cups baby spinach
salt & pepper, to taste
grated parmesan cheese

Directions:

1. Finely chop basil and green onions, grate the yellow of the lemon peel (zest) and juice the lemon into a bowl. Remove any seeds.
2. Place all ingredients in a large pan on the stove and mix well.
3. Add a small amount of hot water and cover. Heat for a minute or two to wilt the spinach.
4. Stir pasta again, season with salt and pepper. If pasta seems too dry, add a little more hot water and mix it in well. Serve topped with parmesan cheese.

This sounds delicious! Mmmm... I can practically smell the basil :) The lemon is a bit surprising, though.

Your photos always look sooo good! Is it really lemony?
I have started basil in my little greenhouse, but somehow I don't think I will have enough for this recipe quite yet. Ha ha.

It is yummy and actually not very lemony. You can taste the lemon, but it is fairly subtle. With all the ricotta and basil, it just kind of blends in. But seriously, cut the recipe if half unless you're feeding the whole family, it makes at least 6 servings!
