I haven't had gingerbread in quite a long time, and I decided it would be fun to make some for my boys this year. Gavin calls them snowmen. :)
Ingredients:
3/4 cup margarine, at room temperature
1 cup white sugar
1 cup brown sugar
1 egg
1/4 cup molasses
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp cloves
1 tsp ginger
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Cream margarine and sugars.
3. Beat in egg and molasses.
4. Combine dry ingredients in a separate bowl, and add to wet mixture.
5. Knead dough until thoroughly blended.
6. Roll out to 1/4 inch thickness and cut with cookie cutters.
7. Bake for 6-8 minutes.
8. Ice once cookies are completely cooled.
Ta-da! It doesn't get much easier. Just make sure you don't over cook then or they will be hard rather than soft and chewy. I used store bought cookie icing to decorate these, it makes it a lot easier.

I love gingerbread cookies! They look great :D I bet the place smelled awesome when you made 'em. I like to make gingerbread cookies and a thermos of hot chocolate and go for a ride downtown and look at Christmas lights. Thanks for sharing the recipe! I'll use it this year :D
