Food Week: Day Seven

Good Morning!

For the last day of Food Week, something decadent. This is like dessert for breakfast, really, but so yummy. It's Raspberry Stuffed French Toast! I went a little crazy and even made some fresh French Bread for it, but you don't have to be that ridiculous, any bread will do. When the little guy was eating it I asked him if it was yummy and he said, "Yeah, Baby!" :) Too funny.


Raspberry Stuffed French Toast

Ingredients:

1 (8 oz.) package light cream cheese, at room temperature
1/2 cup icing sugar
1 Tbsp vanilla extract
1 tsp cinnamon
1 Tbsp raspberry jam
2 cups raspberries
8 slices of bread (or more, we had lots of filling left over)
3 eggs, beaten
2 Tbsp milk

Directions:

Combine cream cheese, sugar, vanilla, cinnamon, and jam in a bowl. Stir until combined. Spread cream cheese mixture on one side of each piece of bread. On four pieces, cover the cream cheese with raspberry pieces (break the berries apart so you have a single layer of raspberries). You won't use all the berries, there should be lots left for topping. Pair a piece with raspberries with a piece without raspberries and make a sandwich. Do this so you have four sandwiches.

Have the oven on with a little heat and a cookie sheet lined with parchment paper to keep sandwiches warm while you finish preparing the rest.

Combine milk and egg in a shallow bowl. Soak both sides of each sandwich in egg then cook in a frying pan over medium heat. Brown both sides then set the sandwich in the oven to stay warm. Sprinkle with icing sugar and serve topped with remaining berries and syrup if desired.

It is fantastic! I first tried it when my brother-in-law made it a year or two ago. He went all out with different flavours and everything. So yummy!
