This semester I had a class from 3:00-6:00 p.m. on Mondays. It wasn't a big problem, except it's pretty hard to get supper on the table for two guys that are hungry around 5:00! So I started planning on having meals ready in the crock pot so they could eat when they were hungry and it was still hot for me when I got home. This recipe for Chicken Fajitas is delicious and easy to make.



What you need:


2-4 boneless, skinless chicken breasts (I used 2 ginormous ones, that were like 4)
2 Tbsp taco seasoning
2 cups salsa
2 cups peppers, sliced or chopped
Tortillas + any toppings you like on fajitas


How to make it:

Put your chicken in the slowcooker and sprinkle taco seasoning over it. Pour in the salsa and cover. Cook on low for 6 hours (or on high for 3). Shred chicken with two forks and stir. Mix in peppers and cook on high for 20 minutes longer. 



Spoon onto tortillas, add any other toppings you like and wrap them up. If you have kids, it's fun to let them choose their toppings, they just might need a little help wrapping it all up!
