Vegetarian Food Week Day 7

I'm a little surprised that I've never posted this recipe before because I've been making it for a few years. Lucky me, I guess! If you can substitute fresh fruit for anything in this recipe, it is definitely worth the chopping, but frozen fruit is easy and tasty too.


Peach & Berry Crisp




What you need:


1 bag (3-4 cups) frozen fruit  - peaches, strawberries, etc.
1 cup blueberries
1/2 cup + 1 Tbsp brown sugar
3/4 cup + 1 Tbsp flour
3/4 cup quick oats
1/2 cup margarine


How to make it:


Preheat oven to 350 degrees Fahrenheit.
Combine fruit & 1 Tbsp each brown sugar and flour in an 8 inch square baking pan. In a medium bowl, mix remaining flour, brown sugar and oats. Add margarine and mix with a fork until the mixture becomes crumbly. Press over fruit and bake for 35 minutes. 


***Best when served with a scoop of vanilla ice cream!

Mmmm... looks yummy! I find that frozen fruit is actually fresher and tastier that the "fresh" fruit you can buy in the winter, because everything is out of season and has to be shipped from so far away.

Thanks, it is delicious. And frozen fruit usually is better in the winter (plus easier). But when we have farmer's market fruit in the summer it does make the dish a lot more naturally sweet and flavourful, you could probably even bypass some of the sugar in that case.
