This summer at the farmer's market we discovered a couple vendors who had amazing cupcakes. I tried a pumpkin spice cupcake at one and it was (obviously) fantastic! I've never given things made with pumpkin much of a chance, but I started to think I was wrong to do that. Anyways, I got a craving recently for some pumpkin cupcakes. They are so yummy!


Pumpkin Spice Cupcakes

What you need:

1/2 cup butter or margarine
1 cup brown sugar
1/3 cup white sugar

2 eggs
1/2 cup milk + 1/2 tbsp lemon juice (or just 1/2 cup buttermilk)

1 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/8 tsp ground cloves
1/4 tsp salt
1/8 tsp black pepper
1 1/2 cups canned pumpkin puree

How to make it:

Preheat oven to 350 degrees Fahrenheit.
Cream butter and sugars until light and fluffy. Add eggs and beat for a few minutes. Beat in milk. Combine dry ingredients in a separate bowl then mix in. Add pumpkin last and beat until smooth. Line a muffin pan with paper liners, fill them about 3/4 full, and bake for 20-25 minutes (or until a toothpick inserted in the centre comes out clean). Allow to cool then top with frosting:

Cream Cheese Frosting

What you need:

1 pkg (8 oz) cream cheese, at room temperature
1/4 cup butter, at room temperature
1 1/2 cups icing sugar
1/2 tsp vanilla

How to make it:

Beat all ingredients together until smooth. Spread on top of cupcakes!
