It's been a while since I had a Food Friday post! A couple weeks ago, Mason's auntie gave us a HUGE zucchini (thanks, Connie!). Seriously, it was massive.
I used some to make the amazing Mediterranean Vegetable Stew, and I made a big chocolate zucchini cake. And there was still lots leftover! So onto the grating and freezing. But in case you find yourself with some zucchini in the next little while, make this...
{no photo, we devoured the stuff!}
Chocolate Zucchini Cake
What you need:
1/2 cup butter, melted
1/2 cup oil
1-1/2 cup sugar
2 eggs
1 tsp vanilla
1/2 cup milk
6 Tbsp cocoa powder
2-1/2 cups flour
1/2 tsp baking powder
1 tsp baking soda
2 cups grated zucchini
How to make it:
Preheat oven to 350 degrees Fahrenheit.
Peel and grate zucchini. Mix ingredients in the order listed. Pour into a greased 9x13 inch baking pan and sprinkle with some chocolate chips. Bake for 35 minutes (or until a toothpick inserted in the centre comes out clean).
Yum!
