Today is day one of Project disConnect! But I still have a yummy recipe for you. :)

This is a fun variation of the Chickpea Curry recipe I shared with you a while ago.

Chickpea Curry Spaghetti

What you need:

4 servings of spaghetti
2 Tbsp olive oil
1 small onion, finely chopped
1 chile or jalapeno pepper, finely chopped
4 cloves garlic, minced
1/2 cup broth
2 Tbsp curry powder
1 (340 ml) can tomato sauce
1 can chickpeas, drained and rinsed

How to make it:

Cook the spaghetti and set aside.

Heat oil in a pan over medium heat. Add onion, pepper and garlic. Cook for 2 minutes. Add curry powder and season with salt. Add stock and scrape the bottom of the pan with a silicone spatula (or something safe for your pan). Add tomato sauce and combine well. Add chickpeas and simmer for 10 minutes. Toss in pasta, mix well and serve!
