I'm not a big fan of pork chops. However, they are cheap and Mason likes them. Plus variety is a good thing, right? So I figured I should incorporate a new pork chop recipe into Food Week! This one is actually really good, and easy too.
Baked Breaded Pork Chops
What you need:
4-8 pork chops
2 Tbsp grated parmesan
1.5 cups bread crumbs
2 Tbsp mustard
1.5 Tbsp parsley
Salt and Pepper to taste
How to make it:
Preheat oven to 425 degrees Fahrenheit. Mix parmesan, crumbs, parsley, salt, and pepper then pour onto a large plate. Brush pork chops with mustard then coat in crumb mixture. Bake on a lightly greased baking sheet for 18-20 minutes (until cooked through) then broil for the last couple minutes to get the top crispy. [Remember to watch closely when broiling so nothing burns!]
So easy! And if you are like my mom and hate mustard with a passion, you could substitute another sauce or even a raw beaten egg... as long as it will help the crumb mixture stick!

What kind of mustard did you use? The normal bright yellow stuff, or dijon? I am a mustard hater too, but Jake puts dijon in some of his salad dressings and you don't even taste it!
I used yellow mustard because it's what we had in the house. You really couldn't taste it at all. I think dijon would be really good too!
