Food Week: Day Seven

I decided to stick with the idea of having a fantastic treat for the Food Week finale the second time around.
{If you recall, last time I ended with Raspberry Stuffed French Toast... yum!}
This time I made some oreo cupcakes! My cousin and his wife hosted a potluck barbecue when we were in Regina last weekend, so I brought these. I've never been an icing lover - usually it's just too much sugar for me. I've actually never been a whipped cream lover either (I know, I'm strange), but these cupcakes just struck the perfect balance. The frosting has enough flavour to not seem like boring whipped cream, but is also not too heavy or sweet like icing usually is.


Oreo Cupcakes

What you need:

[cupcakes]
1/2 cup butter, softened
1 1/4 cups sugar
2 eggs
3/4 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup cocoa
1/2 cup milk
1 tsp vanilla

[frosting]
2 cups whipping cream
3 Tbsp icing sugar
1/2 tsp vanilla
1/2 cup finely crushed oreo cookies
15 mini oreos (to place on top)

How to make it:

Preheat oven to 350 degrees Fahrenheit.

Beat butter and sugar until fluffy. Beat in eggs and vanilla. Mix flour, baking powder & soda, and cocoa in a separate bowl. Alternate adding flour mixture and milk to batter a little at a time, beating in between.

Line baking cups with cupcake cups and fill each about half way with batter. Bake for 20-25 minutes, until a toothpick inserted in the centre comes out clean. Cool completely before frosting.

Whip cream in a medium bowl.  Sweeten with icing sugar and vanilla. Keeping whipping until cream holds its shape. Stir in cookie crumbs and mix well. Dollop, spread or pipe frosting onto fully cooled cupcakes and place a mini oreo on top of each one. Refrigerate until you serve them.
