Food Week: Day Four

This is the second recipe this week where I'm mimicking restaurant meals! I had a cajun cheddar chicken sandwich at Earls months ago and loved it. It seemed easy enough so I tried making some at home.


Cajun Chicken Cheddar Sandwich

What you need:

4 boneless, skinless chicken breasts
cajun seasoning
1 Tbsp olive or vegetable oil
4 garlic cloves, crushed
4 Tbsp mayo
4 ciabatta buns
4 pieces of lettuce
4-8 slices of tomatoes, depending on their size
slices of sharp cheddar cheese

How to make it:

Lay a piece of plastic wrap on the counter (large enough to place all four chicken breasts with space between them). Lay the chicken breasts on top and then cover with another piece of plastic wrap. Take out a small pot and hit the chicken breasts with it to flatten them. Do this until all chicken breasts are the same thickness all over. Remove the top piece of plastic wrap and season (generously) with cajun seasoning on both sides.

Heat oil in a large frying pan over medium heat. Add chicken breasts and cook for 6 minutes on each side, or until cooked through.

In a bowl, mix mayo and garlic for a yummy garlic mayo.

Place ciabatta buns, cut side up on a baking sheet, top one half of each bun with cheddar slices. Broil just until cheese is melted.

Finally, assemble! Spread non-cheesy half of ciabatta buns with garlic mayo, add chicken lettuce and tomato them top with the cheesy half of the bun.
