Good Morning!

For Food Friday this week I'm sharing a yummy pasta dish. It is a variation of a recipe Mason found and made for me on Valentines day! This makes a pretty big batch of pasta, so it is great if you need leftovers or are feeding quite a few people.

Yummy Chicken Fettuccine


4-6 servings worth of dry fettuccine pasta
1 tbsp olive oil
2 chicken breasts (boneless, skinless, cut in half)
2 tbsp italian salad dressing
1 tbsp balsamic vinegar
1 cup sliced/chopped white button mushrooms
1 (650 ml) jar sun-dried tomato pasta sauce
1/2 pkg light cream cheese, cut into small pieces
2 tbsp chopped fresh basil
grated parmesan cheese


Cook pasta according to package directions. In a frying pan heat oil over medium heat. Add chicken and cook for 5 minutes on each side. Add salad dressing, vinegar and mushrooms. Cover and cook until chicken is fully cooked, stirring and turning chicken occasionally. Remove chicken from pan and cut into strips or pieces, however you prefer. Add pasta sauce and cream cheese to pan and stir until cream cheese is totally mixed in. Add basil and stir. Return chicken to the sauce and stir. Add cooked fettuccine noodles and mix well. Serve topped with parmesan cheese.
