Good Morning!

After the last couple Food Fridays, I think it's time to go back to the normal routine and give you a recipe! Today I picked Frozen Mocha Cheesecake. It's sooooo delicious and easy to make too. I made this yesterday because my mom is coming to town today and I wasn't in town for her birthday a couple weeks ago. So this will be her birthday cake. It's going to be delicious, but I'm obviously not going to cut a piece out before she arrives, so you just get the picture of the whole cake.


Frozen Mocha Cheesecake

Ingredients:

1 1/4 cups Oreo crumbs
1/4 cup sugar
1/4 cup butter, melted
8 oz. light cream cheese, at room temperature
14 oz. low fat sweetened condensed milk
1 cup chocolate syrup
1 Tbsp instant coffee
1 tsp hot water
1 cup whipping cream, whipped

Directions:

1. In a small bowl, combine crumbs, sugar and butter. Mix thoroughly then press into the bottom of a pan. I use a 9x9 this time, but I often use 6 inch round pans. If you use these or pie-sized dishes, you will need to double the crust amount. [Note: foil pie plates won't work, they are too flimsy]
2. Stick crust-lined pan in the fridge to chill while you prepare the rest of the cake.
3. Beat cream cheese until fluffy. Add in condensed milk and chocolate syrup.
4. Dissolve instant coffee in hot water then add to the chocolate mixture.
5. Beat in the whipping cream until all ingredients are fully combined.
6. Pour into crumb-lined dish and sprinkle the top with some Oreo crumbs.
7. Freeze for at least 6 hours before serving.

Enjoy! Be warned: this one is addictive. :)
